The ‘Prosecco’ debate rages on. The Italians want to claim the name as their own, as the French did with Champagne and Burgundy.
The grape variety is Prosecco – Champagne and Burgundy were only ever regional locations – so we in Australia see no reason that it can’t be labelled as such, notwithstanding that in pursuit of their claim for ownership our Italian friends renamed the varietal as Glera!
The last heard was the option to label our Aussie releases as ‘Australian Prosecco’ which may be a suitable compromise.

What of the Dalfarras Prosecco itself?

Made without secondary fermentation – CO2 is dosed in during packaging – the characters are not as complex as méthode champenoise, with zesty and fresh floral aromas on a bright and vivacious palate of citrus and green apple fruits, and a delicate sparkling bead.

Dalfarras is about the enjoyment of wine, art and family, myself as the winemaker, my wife Rosa as a creative soul who brings her passion for the natural landscape into her works and a vibrancy to the Dalfarras labels (as well as providing her maiden name Dalfarra to its naming) and our daughter Hayley, bringing a new generational perspective, energy and passion for the environment.
